The delicate white, pink, or red blossoms are void of any detectable scent. Regardless, the flowers are edible and used fresh in salads and soups or as garnishment for cakes and other baked goods. Dried rose petals are added to herbal tea blends and are used to make infusions for use in salves, ointments and lotions. Rose hips (the fruit of the common dog rose, technically known as haws) are the immature fruits of the common rose bush. Like rose petals, rose hips are a popular ingredient in tea blends and in potpourri mixes. Rose hips contain to 2000 mg of vitamin C in each 100 g of dried hips. Ten to fifty times that of an orange. It is recognized to be among the richest plant sources of vitamin C. Rose hips were sought after when citrus fruit was not available to prevent scurvy. However, the drying process destroys 45-90 percent of it, and infusions extract only about 40 percent of what is left. Rose hips are used to make jam, jelly, pie, pastries, tea blends, and other beverages, and add colorful accents to salads, soups, cakes and other foods. Powdered rosehips are used to make various topical preparations, as well as natural body powders and other cosmetics. Rose hip oil is dry and non-greasy, and easily absorbed by the skin. It is an ingredient of many skin care products. It reduces the look of skin dullness, is emollient, moisturizing, and helps with itching. It has anti-inflammatory, anti-aging, antiviral, antibacterial, and antifungal properties. High in vitamin A, E and C, and essential fatty acids linoleic acid (omega-3) and linolenic acid (omega-6), Rosehip oil also helps rosacea, psoriasis, eczema, and dermatitis. It also helps reduce hyperpigmentation and has skin lightening properties, and reduces the look of scars and fine lines and helps cuts and wounds. The rose absolute and rose essential oils are used in aromatherapy for their gentle, energizing stimulant effects. Reducing build-up of daily stresses, they are used to diminish depression and nervous tension. Dried rose petals add more visual appeal than flavor, but do have a very mild pleasant flavor. Botany, Cultivation & Harvesting: Rosa canina is a climbing wild rose species native to Europe, northwest Africa and western Asia. This deciduous shrub normally ranges in height from 1–5 m, though on occasion it can climb higher into the crowns of taller trees. Assisting in the plant’s ability to climb are the small, sharp, hooked prickles that cover its stems. Rosa canina leaves are pinnate, with 5-7 leaflets. The plant’s five-petaled flowers usually bloom pale pink, but vary in color between a deep reddish-pink and white. The flowers are 4–6 cm diameter, and will mature into an oval 1.5–2 cm red-orange fruit, or “rose hip”. Rosa canina prefers a sunny location. It is typically found in cultivated gardens, but can also be located on roadsides and along sandy coastlines. Grows well in most soils, including clay, as long as the soil is not water-logged. Propagate by hardwood cuttings in autumn. In late winter or early spring, apply a balanced fertilizer and mulch for best flowering. Rose hips are best when harvested one week or so after the first frost, if the growing area doesn’t have frost then plan for a late fall harvest when the rose hips gain a deep-red hue and slightly soft to the touch when gently squeezed. Before using, rose hips require de-seeding, mostly to remove the tiny hairs that surround the seeds. Rose hips can be dried in the sun or by using a dehydrator. Afterwards they can be cut into pieces or powdered for later use. Rose petals are harvested in spring and summer (before the hips form) and are also dried for later use. Store dried rose hips and rose petals in an airtight container in a cool, dry place.
