It is a black tea produced in India that has a golden or bronze color, depending on the way it is brewed. Darjeeling does contain some caffeine, but less than coffee. An average 8-ounce cup of the tea contains about 40-70 mg of caffeine. The caffeine content and L-theanine in Darjeeling tea can help improve mental clarity and concentration without making you jittery. Darjeeling tea is used to make cocktails such as Darjeeling Unlimited, which is made with cold-brewed Darjeeling tea, bourbon, lemon, sugar syrup, and a pinch of salt. It is also used to make a Dark and Stormy, mixed with lime juice and ginger beer. A Pompy Spritz II is made with Darjeeling tea and Limoncello liqueur. Darjeeling tea pairs well with carrot cake, French macarons, smoked fish, fruity biscotti, ginger loaf, and dark chocolate. The polyphenols in Darjeeling tea stimulate good bacteria growth in your digestive system, keeping it healthy. The brews also feature a high concentration of catechins, which are naturally occurring antioxidants that increase fat burning and boost metabolism. Darjeeling tea is believed to help reduce cholesterol and improve blood circulation, which may reduce the risk of cardiovascular disease. Darjeeling tea can help regulate the production of a stress hormone called cortisol and help calm the nerves. It is rich and full-bodied with a light astringency that gives it a crispness. Some say it tastes somewhat like wine. It is sweeter and less bitter than other forms of black tea. Botany, Cultivation & Harvesting:  Darjeeling tea is grown in the foothills of the Himalayas in a variety of conditions that create its unique flavor. It is grown at elevations ranging from 3,000 to 7,000 feet above sea level. The region receives an average of 1,700-2,500 mm of rainfall annually. The climate is cool and wet, with high humidity, fog, and gentle breezes. The soil is rich and organic, and is typically reddish in color. The terrain is steep and sloped at a gradient of 60-70 degrees to provide natural drainage. The ideal temperature is above freezing and below 22°C. The tea plants need plenty of sunshine, especially during the first flush crop. The tea bushes are grown in rows and pruned regularly to maintain their shape and promote new growth. The leaves are hand-plucked every five to ten days, usually the top two leaves and a bud. The tea is typically harvested twice a year, with the first and second flushes having distinct flavors and aromas. The tea bushes require about three years before they are ready to pluck. The leaves are rolled in large cast-iron machines to rupture their cell walls and release oxidative enzymes. Contraindications & Toxicity: Do not use if pregnant or nursing. Do not use more than 200 mg per day if suffering from migraines, heart conditions, or mental health conditions. Consuming too many tannin plant compounds from any type of tea can cause nausea and constipation and reduce iron absorption.
