Sunflower seed butter is a good nut-free option. Sunflower seeds contain vitamin E, an antioxidant that protects cell membranes and brain cells. And may also help inhibit the growth of cancer cells. They may also help support thyroid health. Sunflower oil contains vitamin E that helps maintain healthy skin. It also contains omega-6 and omega-9, which contribute to tissue and cell strength. The vitamin K in sunflower oil can help regulate blood health, bone metabolism, and calcium levels. Used topically, sunflower oil is very moisturizing and can help soften skin. The vitamin E content can help protect from sun damage and premature aging, and its linoleic acid helps skin retain moisture, which is especially helpful for people with dry skin and eczema. The oil can also help remove dead skin cells and reduce skin itchiness. It can even help reduce the appearance of large pores and help wounds heal faster. It has been said that a woman wishing to conceive should eat them. Because sunflowers follow the Sun’s path, they are thought to symbolize loyalty and adoration. The buds taste like artichokes with overtones of smokiness. The flowers have a unique bitter flavor. Sunflower seeds have a mild, nutty flavor. Botany, Cultivation & Harvesting: Sunflowers need at least six to eight hours of direct sunlight per day. They prefer nutrient-rich soil, so you can amend the soil with compost or organic matter. Sow seeds directly in the soil after the last frost, about ¼” inch deep and one foot apart to germinate in 10-15 days. Seed can be started indoors in individual peat pots 3 to 4 weeks before setting out. Plant in full sun with rich soil and keep well weeded. Water regularly until the seeds sprout, then water every few days during dry spells. Space out waterings once the seeds germinate, allowing the roots to dry out and develop deeper. Mulch helps keep the soil cool and moist, which protects the roots and deters weeds. As sunflowers grow taller, they may need support to prevent them from falling over. You can use stakes, cages, or trellises. Sunflowers can attract birds, deer, and squirrels. They can be protected with tall netting, wire barriers, or garden fleece. Fertilize sunflowers with an all-purpose granular garden fertilizer. You can also add a slow-acting granular fertilizer to poor or thin soil. The seeds are ripe when the heads droop and the back of the head turns first yellow and then brown. Cut flowers early or late in the day, not at noon. Take off the extra leaves and put in tepid water for cut flowers. For dried flowers, cut the stems and hang them upside down in a dry warm airy place until the flowers become light and brittle. To dry the heads for crafts, put cut heads face up on a screen or poke them through the spaces in a section of wire fence in a warm dry place. You can also put large flower heads in the oven at 150-175°F (65-80°C)) until they are dried. Contraindications & Toxicity: Do not use if pregnant or nursing. Do not use if allergic.
