It is a superfood abundant in antioxidants, omega-3 fatty acids, vitamins A, B2, B6, C and K, and a long list of nutrients, including folate, iron, zinc, calcium, potassium, phosphorus, chlorophyll, niacin and selenium. It is also fat and gluten-free. Spinach is eaten as a vegetable in salads and cooked dishes. The leaf extract powder is used in supplements, juices, smoothies, and teas. Botany, Cultivation & Harvesting: Spinach is an erect, glabrous, annual herb native to Belize, China, Ecuador, Honduras, the United States, and Europe. It grows in zones 2 to 11, from 6 inches to 1 foot high and 6 inches to 1 foot wide. It prefers full sun to part shade and medium water. It is easily grown in moist, organically rich, fertile, well-drained soils. It is a cool weather vegetable that produces an excellent crop in the cool temperatures of spring and/or fall. It does poorly in the heat of summer when plants bolt (send up greenish-yellow flower spikes) which results in deterioration of the leaves. Plants grown in part shade may bolt later than those grown in full sun. For spring crops, start seed indoors about 8 weeks prior to last frost. Plant seedlings outdoors about 3 weeks prior to last frost. The plants will tolerate some frost. Seed can also be planted directly outdoors in early spring. Sow ½” deep in rows 12” apart. To lengthen harvest time, start seed at two-week intervals. For fall crops, plant seed indoors the second week of August. Transplant outdoors at the end of August or by directly seeding outdoors. A fall crop can be harvested until cold weather arrives (sometimes up to Thanksgiving). Harvest leaves as soon as they are of usable size. Harvest all leaves when plants bolt in summer.
