It is a good choice for people who cannot or choose not to eat animal protein. Amaranth is a pseudocereal, a seed rather like grain, like quinoa and buckwheat. Its seeds are high in protein and lysine, an amino acid that most grains are deficient in. Amaranth also contains fiber, which can help with digestion and relieve constipation and diarrhea. Amaranth is added to many dishes. It is cooked like other grains, added to soups, smoothies and salads, and amaranth flour is used to make muffins and quick breads. Botany, Cultivation & Harvesting: Amaranth is native to meso-America, where the Aztecs and Maya cultivated it as food and for ceremonial purposes. China is currently the world’s largest producer of amaranth. In the United States, amaranth is grown in the Great Plains and Midwest states. It is also grown in India, Nepal, Africa, Russia, parts of eastern Europe, South America, and the Caribbean. Amaranth is a warm-season crop that can adapt to moist soils, but grows best in fertile, well-drained loam. It thrives in temperatures between 70-85° and will not tolerate frost. To grow amaranth, you can sow seeds outdoors after the last spring frost when soil is warm (in mid-spring or early summer), or start seedlings indoors six to eight weeks before the average last frost. The ideal soil temperature for germination is 65-75°F. Amaranth grows best in full sun. Sow seeds about 3-6 inches apart. Do not cover the seeds, as they need light to germinate. Keep the soil moist until seedlings sprout, then water once or twice a week during dry periods. For few plants, tomato cages may be enough, but for rows or blocks, you will need netting or metal supports. Deadheading can encourage more blooms and prevent the plant from self-seeding.
