Due to their ‘complete’ protein content, Soybeans are popular for people following a vegetarian or vegan diet, and are also processed into milk, butter, flour, sauces, meat substitutes, and more. Soybeans also contain all the essential amino acids, like those found in meat. They are high in fiber, low in saturated fat, cholesterol free, lactose free, a source of antioxidants and isoflavones, and a good source of omega-3 fatty acids. Soybeans are also a source of calcium, iron, magnesium, phosphorus, potassium, zinc, copper, manganese, selenium, thiamine, riboflavin, vitamin B6, and folate. Soybeans and Soy foods may reduce the risk of a range of health problems, including cardiovascular disease, stroke, coronary heart disease, and breast and endometrial cancers, as well as improving bone health. Soybeans have been shown to lower total cholesterol, LDL (bad) cholesterol and triglycerides, while increasing HDL (good) cholesterol. Soybeans contain a hormone-like substance (called phytoestrogens) that copy the action of the female hormone estrogen (although far less powerful). It is believed that Soy can reduce symptoms of peri-menopause and post-menopause (such as hot flashes, fatigue, joint pain, and irritability). Soybeans are also believed to help improve bone health and prevent osteoporosis in post-menopausal women. Some research suggests that women with high intakes of Soy isoflavones were 30-80% more likely to give birth following fertility treatments than those with lower Soy isoflavone intakes. The effects have not been found to be the same for men. And for women not participating in fertility treatments, Soy isoflavones have shown to sometimes have the opposite effect and may reduce ovarian function. Soy isoflavones may also help lower insulin resistance, a condition which cells no longer respond to insulin normally. Insulin resistance can lead to high blood sugar levels and lead to type 2 diabetes. Some evidence suggests that Soy protein may help slightly lower blood sugar and insulin levels in people with type 2 diabetes or metabolic syndrome. In Japan, the festival Setsubun is celebrated four times a year at the change of each season, the most popular being the change of winter to spring. This festival takes place on February 3rd, around the time of the lunar New Year. In China and Japan, many believe that illness and misfortune is caused by demons, or “oni”. Purging the home of oni is a traditional part of the Setsubun rituals. Soybeans are believed to contain the powers of the five elements wood, water, fire, metal, and earth. They are thought to be a powerful weapon against the oni demons. Thus, throwing Soybeans at demons is a popular ritual of Setsubun. In schools, teachers dress up as oni demons and children throw roasted soybeans at them, yelling “Oni wa soto!”, which means “Out with demons!” This ritual is also carried out in homes and temples to purge demons and ensure good health and fortune in the New Year. After throwing the beans, people eat the same number of beans that equal their age, plus one, for protection. Botany, Cultivation & Harvesting:  According to Trading Economics, the United States, Brazil, Argentina and Paraguay are major producers and exporters of Soybeans. Soybeans are native to Southeast Asia and can be traced back 5,000 years. Spreading throughout Japan and other parts of Asia, it became a dietary staple in the East. Soybean crops were introduced to America some time around 1765. Soybeans grow best in well-drained (but with adequate moisture, and not sandy or gravelly) rich organic matter soils with a pH of 6.0 to 7.5. Plant Soybeans ideally between the 5th – 25th of May (two to three weeks after the last frost), although they can be planted as early as late April. Insecticide/fungicide seed treatments are recommended, but do not place fertilizer in contact with the seed. It can be planted as late as mid-June, however late plantings result in lower yield as the plant must be harvested in August before drying out. The optimal temperature range for growing Soybean is between 72 and 95°F. Plant seeds at a depth of about 1.25 to 1.5 inches (not over 2”). After sowing seeds, cover lightly with soil and moisten thoroughly with warm water. The seeds require from 100 to 130 days or more to complete the full growth cycle. When the beans grow to fully ripe, they retain 45-55% moisture and need to be dried down to 13-14% before being picked. Cut the plant and extract the beans from the pods. The beans can be dried whole, or dried and powdered. Store in an airtight container in a cool, dry place.
